Since Borneo isn't inhabited by many people, I really don't know for sure if this is what they would eat there, but I was thinking about Bornio and I got inspired by this mysterious island.
The rub consists of what most people consider Christmas spices, but it really tastes very exotic when paired with the coconut sauce. The sauce is very hot (as in spicy) and can be even hotter with more cayenne pepper added.
I, personally, love the heat, so I was quite generous with the amount of pepper. You don't really get the taste of the cayenne until the aftertaste, so don't add anymore until you've tasted it and waited a minute or two.
As for the chicken, it can be any type of fowl. A quail would really go nicely with this dish, so you don't have to be restricted only to chicken.

Ingredients:
For the Rub:
1 t. ground ginger
1/2 t. ground nutmeg
1/4 t. ground cinnamon
1/4 t. cayenne pepper
1/4 t. crushed cacao nibs
For the Sauce:
1 can coconut milk
2 T. honey
2 T. pineapple juice
1 t. lime juice
1/2 t. cayenne pepper
3 to 3 1/2 lbs. chicken
Preparation:
Heat up the grill to high. Combine all ingredients in the rub. Apply generously to the chicken on both sides.
While waiting on the grill, heat the coconut milk and cayenne pepper in a medium sized saucepan on medium to medium-high, making sure it does not boil.
When it begins to steam, add the rest of the sauce ingredients. Cook the chicken on grill to your liking.
Serve with liberal amounts of the coconut sauce.
